How it is put together
The package price
The discount comes from whoever has idle capacity. If the restaurant has free tables midweek, it charges less for each package dinner and the hotel keeps its rate.
"Night + dinner" package on a Tuesdaycalculation
Night in a room with a view $4,300
Dinner for two at Fuego Lento $1,800
Price if bought separately $6,100
"Night + dinner" package $5,600 (8% less)
Hotel pays the restaurant $1,300 agreed rate per dinner
Hotel keeps $4,300 its full rate
Recommendation. The restaurant collects $1,300 for a table it was not going to sell that Tuesday, and it also charges directly for drinks and anything ordered off the menu.
Allotments and vouchers
The restaurant holds fixed allotments for guests on the agreed days. Each package booking generates a voucher with its own code, which the restaurant marks when the couple arrives.
A redeemed vouchertext
Voucher FL-0412
Booking RES-48213 · 2 people · Tuesday the 14th
Table 9:00 pm · Fuego Lento
Status redeemed at 9:07 pm · extra spend $640, charged by the restaurant
Recommendation. Fixed allotments prevent the worst outcome: a guest with dinner included and the restaurant fully booked.
Monthly reconciliation
Once a month, issued vouchers are matched against redeemed ones and the agreed amount is paid.

Vouchers redeemed 13 (93%)
Owed to the restaurant 13 × $1,300 = $16,900

Recommendation. What happens to an unredeemed voucher is put in writing before launch: paid in full, paid at half, or not paid.

Frequently asked questions
How is the money split?
Each partner charges for its own service within the package at the agreed rate, and it is reconciled once a month against the redeemed vouchers. We put it in writing before launch.
What if the partnership doesn't work?
It is measured from day one with its own link. If it isn't selling after a month, it gets adjusted or ended.
